the "average" galaxy probably holds about 400 billion stars, although there is a huge amount of debate as to what is "average" in an infinite universe.

as to how many galaxies, well, the size of the "observable" universe changes almost every day... for all practical purposes you might just want to consider the number to be infinite... there are an infinite number of galaxies in the infinite universe
